- 8 ounces pasta of your choice (penne, fettuccine, or spaghetti)
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 can (14.5 ounces) diced tomatoes, undrained
- 1 cup heavy cream
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 1/2 cup grated Parmesan cheese
- Fresh basil leaves for garnish (optional)
Instructions
- Cook the pasta according to the package instructions in a large pot of salted boiling water until al dente. Reserve about a cup of pasta water, then drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant.
- Add the can of diced tomatoes (with juice) to the skillet and let it simmer for about 5 minutes.
- Pour in the heavy cream and add the dried basil and oregano. Stir and let it simmer for another 3 to 5 minutes until the sauce thickens. Season with salt and pepper to taste.
- Add the cooked pasta to the skillet and toss to coat, adding reserved pasta water if needed.
- Sprinkle in the grated Parmesan cheese and stir until melted. Cook for another minute.
- Serve hot, garnished with fresh basil leaves if desired.
Notes
- For a lighter version, you can substitute heavy cream with half-and-half or a non-dairy alternative.
- Feel free to add vegetables like spinach or mushrooms for extra nutrition.
