2 cups cooked chicken, diced
3 cups fresh spinach, chopped
1 cup cream of chicken soup
½ cup sour cream
1 cup shredded cheddar cheese
½ cup grated Parmesan cheese
2 cloves garlic, minced
1 teaspoon Italian seasoning
Salt and pepper to taste
1 cup cooked rice or pasta (optional, for a heartier casserole)
Instructions
Preheat your oven to 350°F (175°C) and lightly grease a baking dish.
In a skillet over medium heat, sauté diced chicken until cooked through (about 5–7 minutes). Add minced garlic and cook for another minute until fragrant.
In a large mixing bowl, combine the cooked chicken, chopped spinach, cream of chicken soup, sour cream, Italian seasoning, salt, and pepper. Stir until everything is evenly mixed.
Fold in the cheddar and Parmesan cheese, coating all ingredients in the creamy mixture.
Add cooked rice or pasta if desired, then transfer the mixture to the prepared baking dish.
Cover with foil and bake for 20 minutes. Remove foil and bake another 10 minutes, until bubbly and lightly golden on top.
Allow the casserole to rest for a few minutes before serving.
Notes
For a vegetarian option, substitute chicken with mushrooms or tofu.
