Creamy Cajun Chicken Stuffed Shells are a delicious and hearty dish filled with shredded chicken, cheeses, and Cajun spices, all baked in a creamy Alfredo sauce.


Ingredients

  • 12 pieces jumbo pasta shells
  • 2 cups cooked chicken, shredded (use rotisserie or leftover chicken)
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese, shredded (reserve half for topping)
  • 1/2 cup Parmesan cheese, grated (reserve for topping)
  • 1/2 teaspoon Cajun seasoning (adjust to taste)
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup Alfredo sauce (store-bought or homemade)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large pot of boiling salted water, cook the jumbo pasta shells until al dente, about 8-10 minutes. Drain and set aside.
  3. In a mixing bowl, combine the shredded chicken, ricotta cheese, half of the mozzarella cheese, Cajun seasoning, garlic powder, salt, and pepper. Mix well.
  4. Carefully stuff each cooked pasta shell with the chicken mixture.
  5. In a 9×13-inch baking dish, spread half of the Alfredo sauce on the bottom. Place the stuffed shells in a single layer on top and pour the remaining Alfredo sauce over the shells.
  6. Sprinkle the remaining mozzarella and Parmesan cheese on top.
  7. Cover the dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes until the cheese is golden and bubbling.
  8. Garnish with chopped parsley and let sit for a few minutes before serving.
