Description

Cranberry Crumble Bars are a delicious sweet treat made with fresh or frozen cranberries, a crumbly topping, and a hint of cinnamon, perfect for any dessert table.


Ingredients

  • 2 cups fresh or frozen cranberries
  • 1 cup granulated sugar, divided
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 cup all-purpose flour
  • 1/2 cup rolled oats
  • 1/2 cup packed brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup unsalted butter, melted
  • 1/2 cup chopped pecans or walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking dish or line it with parchment paper for easy removal.
  2. In a medium saucepan over medium heat, combine the cranberries, 1/2 cup of the granulated sugar, lemon juice, vanilla extract, and salt. Cook, stirring occasionally, until the cranberries start to burst and the mixture thickens, about 5 to 7 minutes. Remove from heat and set aside to cool slightly.
  3. In a large mixing bowl, whisk together the flour, rolled oats, brown sugar, remaining 1/2 cup of granulated sugar, ground cinnamon, and melted butter. Mix until the mixture resembles coarse crumbs. If you’re using nuts, fold them in at this stage for an added crunch.
  4. Press about two-thirds of the crumble mixture into the bottom of the prepared baking dish to form a crust. Make sure it’s packed down evenly.
  5. Spread the cranberry mixture over the crust, making sure to cover it evenly. Then, sprinkle the remaining crumble mixture over the top of the cranberries.
  6. Bake in the preheated oven for 30 to 35 minutes, or until the top is golden brown and the cranberry filling is bubbly.
  7. Once done, remove from the oven and allow to cool in the pan for about 10 minutes. Then, lift the bars out using the parchment paper (if you used it) and let them cool completely on a wire rack before slicing into squares.

  • These bars can be served warm or at room temperature.
  • Store leftovers in an airtight container at room temperature for up to 3 days.
  • For a festive touch, serve with whipped cream or vanilla ice cream.
