Delicious homemade version of the classic Girl Scouts Thin Mints Cookies.

- 1 cup all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon peppermint extract
- 1 teaspoon vanilla extract
- 1 cup semi-sweet chocolate chips
- 1 tablespoon coconut oil (optional, for thinning chocolate)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together the flour, cocoa powder, baking powder, and salt. Set aside.
- In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy (about 2-3 minutes).
- Add the egg, peppermint extract, and vanilla extract to the butter-sugar mixture and beat until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined.
- Turn the dough out onto a lightly floured surface and roll it out to about 1/4 inch thick.
- Use a round cookie cutter (about 2 inches in diameter) to cut out cookies and place them on the prepared baking sheet.
- Bake the cookies for about 10-12 minutes until set but still soft. Let cool on the baking sheet for a few minutes before transferring to a wire rack.
- Melt the chocolate chips in a microwave-safe bowl, heating in 30-second intervals and stirring until smooth. Stir in coconut oil if desired.
- Once cookies are cool, dip each into the melted chocolate, coating evenly, and let excess chocolate drip off.
- Place dipped cookies back on the parchment-lined baking sheet and refrigerate for about 30 minutes to set the chocolate.

- Ensure cookies are completely cool before dipping in chocolate.
- Store cookies in an airtight container to maintain freshness.
- Feel free to adjust the amount of peppermint extract to taste.
