Ingredients

  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon peppermint extract
  • 1 teaspoon vanilla extract
  • 1 cup semi-sweet chocolate chips
  • 1 tablespoon coconut oil (optional, for thinning chocolate)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, cocoa powder, baking powder, and salt. Set aside.
  3. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy (about 2-3 minutes).
  4. Add the egg, peppermint extract, and vanilla extract to the butter-sugar mixture and beat until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined.
  6. Turn the dough out onto a lightly floured surface and roll it out to about 1/4 inch thick.
  7. Use a round cookie cutter (about 2 inches in diameter) to cut out cookies and place them on the prepared baking sheet.
  8. Bake the cookies for about 10-12 minutes until set but still soft. Let cool on the baking sheet for a few minutes before transferring to a wire rack.
  9. Melt the chocolate chips in a microwave-safe bowl, heating in 30-second intervals and stirring until smooth. Stir in coconut oil if desired.
  10. Once cookies are cool, dip each into the melted chocolate, coating evenly, and let excess chocolate drip off.
  11. Place dipped cookies back on the parchment-lined baking sheet and refrigerate for about 30 minutes to set the chocolate.
