- 1 and 1/2 cups digestive biscuits, crushed into fine crumbs
- 1/2 cup unsalted butter, melted
- 1/4 cup granulated sugar
- 1 cup hazelnuts, toasted and roughly chopped
- 1 cup heavy cream
- 1 cup dark chocolate chips (about 60% cocoa)
- 1/2 cup light brown sugar
- 1/4 cup corn syrup
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 1/2 cup additional hazelnuts for garnish (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9-inch tart pan with a removable bottom or line it with parchment paper for easy removal.
- In a mixing bowl, combine the crushed digestive biscuits, melted butter, and granulated sugar. Stir until the mixture resembles wet sand. Press this mixture firmly into the bottom and up the sides of the prepared tart pan, creating an even layer. Bake for about 10 minutes, or until the crust is lightly golden. Remove from the oven and let it cool completely.
- While the crust is cooling, prepare the toffee filling. In a medium saucepan over medium heat, combine the heavy cream, dark chocolate chips, light brown sugar, corn syrup, and salt. Stir continuously until the chocolate is melted and the mixture is smooth and well combined. Remove from heat and stir in the vanilla extract.
- Sprinkle the toasted hazelnuts evenly over the cooled tart crust. Carefully pour the chocolate toffee mixture over the hazelnuts, spreading it gently to ensure an even layer.
- Bake the tart in the oven for an additional 15-20 minutes, or until the filling is set but still slightly soft in the center. Remove from the oven and let it cool at room temperature for about 30 minutes.
- Once cooled, refrigerate the tart for at least 2 hours to allow it to firm up completely. Before serving, sprinkle the additional chopped hazelnuts on top for a delightful crunch and garnish.
- Slice the tart into wedges and serve chilled or at room temperature. Enjoy this decadent treat with a dollop of whipped cream or a scoop of vanilla ice cream if you’re feelin’ extra indulgent!
