  • 1/2 teaspoon red pepper flakes (adjust to taste)
  • 1 can (28 ounces) crushed tomatoes
  • 1 teaspoon sugar (to balance acidity)
  • Salt and pepper to taste
  • 4 cups fresh spinach, roughly chopped
  • Juice of 1 lemon
  • Fresh parsley or cilantro for garnish (optional)

Instructions

  1. In a large skillet or saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until it becomes translucent, about 5 minutes.
  2. Stir in the minced garlic and cook for another minute, until fragrant—don’t let it burn!
  3. Sprinkle in the ground cumin, smoked paprika, and red pepper flakes. Stir everything together and let those spices toast for about 30 seconds.
  4. Pour in the crushed tomatoes and add the sugar, salt, and pepper. Bring the mixture to a gentle simmer for about 10 minutes.
  5. Add the drained chickpeas and stir well to coat them in the sauce. Let it simmer for another 5 minutes.
  6. Add the fresh spinach and stir until it wilts down, which should take just a couple of minutes.
  7. Finish with a squeeze of fresh lemon juice and adjust seasoning if needed.
  8. Serve warm, garnished with fresh parsley or cilantro if desired.
