- 2 pounds boneless, skinless chicken thighs
- 4 cloves garlic, minced
- 1 tablespoon ground cumin
- 1 tablespoon ground coriander
- 1 tablespoon ground paprika
- 1 teaspoon ground turmeric
- 1 teaspoon ground cinnamon
- 1 teaspoon cayenne pepper (adjust to taste)
- 1/4 cup plain yogurt
- 1/4 cup olive oil
- Juice of 1 lemon
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
- 3 cups all-purpose flour
- 1 teaspoon instant yeast
- 1 teaspoon sugar
- 1 teaspoon salt
- 1 cup warm water
- 2 tablespoons olive oil
- In a large bowl, combine the minced garlic, cumin, coriander, paprika, turmeric, cinnamon, cayenne pepper, yogurt, olive oil, lemon juice, salt, and pepper. Whisk it all together until you have a smooth marinade.
- Add the chicken thighs to the marinade, making sure they’re well coated. Cover the bowl with plastic wrap and let it marinate in the fridge for at least 1 hour, but ideally overnight for maximum flavor.
- Preheat your grill or a skillet over medium-high heat. If using a grill, oil the grates to prevent sticking.
- Remove the chicken from the marinade and let any excess drip off. Grill the chicken for about 5-7 minutes per side, or until the internal temperature reaches 165°F and the chicken is nicely charred.
- Once cooked, let the chicken rest for a few minutes before slicing it into thin strips. Garnish with fresh parsley.
- In a large mixing bowl, combine the flour, instant yeast, sugar, and salt. Mix well.
- Gradually add the warm water and olive oil to the dry ingredients, stirring until a dough begins to form.
- Knead the dough on a floured surface for about 5-7 minutes, until it’s smooth and elastic.
- Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour, or until it doubles in size.
- Once risen, punch down the dough and divide it into 6 equal pieces. Roll each piece into a ball and let them rest for another 10 minutes.
- Roll each ball out into a flat circle about 1/4 inch thick.
- Heat a skillet or griddle over medium-high heat. Cook each piece of dough for about 2-3 minutes on each side, or until it’s puffed up and has nice brown spots.
- Keep the cooked laffa bread warm in a clean kitchen towel while you finish cooking the rest.
- Layer the sliced chicken shawarma on the warm laffa bread, adding your favorite toppings like tahini sauce, pickles, tomatoes, and lettuce. Roll it up or fold it over, and enjoy a delicious homemade meal!
