- 2 cups cooked chicken, shredded or diced
- 1 cup long-grain white rice, uncooked
- 1 can (10.5 oz) cream of chicken soup
- 1 can (10.5 oz) chicken broth
- 1 cup milk
- 1 cup frozen mixed vegetables (peas, carrots, corn)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 1/2 teaspoon paprika
- 1 cup shredded cheddar cheese (optional)
Instructions
- Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.
- In a large mixing bowl, combine the cooked chicken, uncooked rice, cream of chicken soup, chicken broth, milk, and frozen mixed vegetables. Stir until well mixed.
- Season the mixture with garlic powder, onion powder, black pepper, salt, and paprika. Stir again to distribute the flavors.
- Pour the mixture into the prepared baking dish, spreading it evenly. If desired, sprinkle shredded cheddar cheese on top.
- Cover the baking dish tightly with aluminum foil and bake for about 45 minutes.
- After 45 minutes, remove the foil and stir the casserole gently. Return it to the oven uncovered and bake for an additional 15 to 20 minutes, or until the rice is tender and the liquid is absorbed.
- Let it sit for 5-10 minutes before serving. Enjoy!
Notes
- For a healthier option, you can use low-fat cream of chicken soup and low-fat milk.
- Feel free to add other vegetables or spices according to your preference.
- This casserole can be made ahead of time and stored in the refrigerator before baking.
