A delightful recipe for Caramel Bourbon Bread Pudding that combines rich flavors of bourbon and caramel with sweet bread and chocolate.


Ingredients

  • 2 tbsp unsalted butter, room temperature
  • 2 (14 oz) loaves of day old brioche, 1” cubes
  • 1/2 cup chocolate chips
  • 1/4 cup caramel chips
  • 1/4 cup dried sweetened cranberries
  • 1 tbsp cinnamon
  • 1 cup whole milk
  • 2 eggs
  • 1/4 cup sugar
  • 1 tbsp bourbon
  • pinch salt
  • 1 (13.4 oz) can dulce de leche
  • 1/2 cup unsalted butter
  • 1/4 cup bourbon

Instructions

  1. Preheat the grill/oven to 350 ºF.
  2. Cut up the bread into 1″ cubes.
  3. Grease a 12″ Cast Iron skillet with butter.
  4. Place the bread in the skillet with the chocolate chips, cranberries, and cinnamon.
  5. Mix the custard together and pour over the bread mixture.
  6. Let it rest for 30 minutes to soak up the custard.
  7. Top with Pecans.
  8. Cook for 25 minutes covered at 350 ºF then remove the lid and turn the grill/oven to 400 ºF and cook for an additional 15-25 minutes.

Notes

  • Ensure the brioche is day old for the best texture.
  • Feel free to substitute the chocolate chips with your favorite type of chocolate.
  • For a nutty flavor, add chopped pecans on top before baking.
