A delightful recipe for Caramel Bourbon Bread Pudding that combines rich flavors of bourbon and caramel with sweet bread and chocolate.

- 2 tbsp unsalted butter, room temperature
- 2 (14 oz) loaves of day old brioche, 1” cubes
- 1/2 cup chocolate chips
- 1/4 cup caramel chips
- 1/4 cup dried sweetened cranberries
- 1 tbsp cinnamon
- 1 cup whole milk
- 2 eggs
- 1/4 cup sugar
- 1 tbsp bourbon
- pinch salt
- 1 (13.4 oz) can dulce de leche
- 1/2 cup unsalted butter
- 1/4 cup bourbon
Instructions
- Preheat the grill/oven to 350 ºF.
- Cut up the bread into 1″ cubes.
- Grease a 12″ Cast Iron skillet with butter.
- Place the bread in the skillet with the chocolate chips, cranberries, and cinnamon.
- Mix the custard together and pour over the bread mixture.
- Let it rest for 30 minutes to soak up the custard.
- Top with Pecans.
- Cook for 25 minutes covered at 350 ºF then remove the lid and turn the grill/oven to 400 ºF and cook for an additional 15-25 minutes.
Notes
- Ensure the brioche is day old for the best texture.
- Feel free to substitute the chocolate chips with your favorite type of chocolate.
- For a nutty flavor, add chopped pecans on top before baking.
