  • 2 tablespoons vegetable oil
  • 4 cloves garlic, minced
  • 1 inch piece of ginger, sliced thin
  • 1 onion, chopped
  • 2 cups chicken broth
  • 4 medium potatoes, peeled and diced
  • 2 carrots, sliced
  • 1 bell pepper, chopped
  • 2 green onions, chopped (for garnish)
  • Salt and pepper to taste

Instructions

  1. Marinate the chicken wings in a mixture of soy sauce, oyster sauce, rice wine, sugar, five-spice powder, and cornstarch for at least 30 minutes.
  2. Heat vegetable oil in a large pot over medium-high heat and sauté minced garlic and sliced ginger until fragrant.
  3. Add the marinated chicken wings to the pot and sear until golden brown on all sides, about 5-7 minutes.
  4. Toss in the chopped onion and sauté for another 2-3 minutes until softened.
  5. Pour in the chicken broth, scraping up any browned bits from the bottom of the pot.
  6. Add diced potatoes, sliced carrots, and chopped bell pepper, stirring to combine.
  7. Bring the stew to a gentle boil, then reduce heat to low, cover, and simmer for 30-40 minutes until vegetables are tender.
  8. Season with salt and pepper to taste, and add chili flakes if desired.
  9. Ladle the stew into bowls and garnish with chopped green onions before serving hot.
