California Spaghetti Salad

Ingredients:

  • 1 lb spaghetti, cooked al dente and cooled
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup black olives, sliced
  • 1/4 cup parmesan cheese, grated
  • 1/3 cup Italian dressing
  • 1 tablespoon red wine vinegar
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh basil leaves, for garnish

Directions:

  1. In a large bowl, combine cooked spaghetti, cherry tomatoes, cucumber, red bell pepper, green bell pepper, red onion, and black olives.
  2. In a small bowl, whisk together Italian dressing, red wine vinegar, garlic powder, dried oregano, salt, and pepper.
  3. Pour the dressing over the spaghetti mixture and toss to combine thoroughly.
  4. Chill in the refrigerator for at least 2 hours before serving.
  5. Just before serving, sprinkle with grated parmesan cheese and garnish with fresh basil leaves.
