Ingredients:
- 1 cup unsalted butter, softened
- 1/2 cup powdered sugar
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- 1 cup finely chopped pecans
- 1/4 teaspoon salt
- Additional powdered sugar for rolling
Directions:
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large mixing bowl, beat the softened butter and 1/2 cup powdered sugar until light and fluffy.
- Mix in the vanilla extract until well combined.
- Gradually add the flour and salt, mixing until just combined.
- Stir in the finely chopped pecans.
- Shape the dough into 1-inch balls and place them on the prepared baking sheet, about 1 inch apart.
- Bake for 10-12 minutes, or until the bottoms are lightly golden.
- Allow the cookies to cool slightly on the baking sheet for about 5 minutes.
- While the cookies are still warm, roll them in additional powdered sugar to coat. Let them cool completely on a wire rack, then roll them in powdered sugar again before serving.
