Buttery Pecan Snowball Cookies

Ingredients:

  • 1 cup unsalted butter, softened
  • 1/2 cup powdered sugar
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 cup finely chopped pecans
  • 1/4 teaspoon salt
  • Additional powdered sugar for rolling

Directions:

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large mixing bowl, beat the softened butter and 1/2 cup powdered sugar until light and fluffy.
  3. Mix in the vanilla extract until well combined.
  4. Gradually add the flour and salt, mixing until just combined.
  5. Stir in the finely chopped pecans.
  6. Shape the dough into 1-inch balls and place them on the prepared baking sheet, about 1 inch apart.
  7. Bake for 10-12 minutes, or until the bottoms are lightly golden.
  8. Allow the cookies to cool slightly on the baking sheet for about 5 minutes.
  9. While the cookies are still warm, roll them in additional powdered sugar to coat. Let them cool completely on a wire rack, then roll them in powdered sugar again before serving.
