- 2 cups granulated sugar
- ½ cup unsalted butter
- ⅓ cup heavy cream
- 1 teaspoon vanilla extract
- 1 cup pecans (chopped)

Instructions
- Line an 8-inch square baking dish with parchment paper or aluminum foil, leaving some overhang.
- In a medium saucepan, combine the sugar, butter, and heavy cream. Cook the mixture over medium heat, stirring until it comes to a rolling boil.
- Allow the mixture to boil for 4 to 5 minutes without stirring, checking that it reaches the soft-ball stage (about 234°F or 112°C) with a candy thermometer.
- Remove from heat and quickly stir in the vanilla extract, chopped pecans, and a pinch of salt.
- Pour the mixture into the prepared baking dish and spread it evenly with a spatula. Let it cool at room temperature for about an hour or until set.
- Lift the fudge out of the dish using the overhang and cut it into squares to serve.
