Ingredients

  • 1/2 pound sliced beef (like brisket or ribeye)
  • 1/2 onion, sliced
  • 2 cloves garlic, minced
  • 1/2 cup kimchi, chopped
  • 1 cup water or beef broth
  • 1 tablespoon gochujang (Korean red pepper paste)
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1/2 teaspoon black pepper
  • 1 cup instant ramen noodles
  • 1/2 cup baked beans (canned)
  • 1/2 cup sliced hot dogs or sausages
  • 1/2 cup tofu, cubed
  • 1 cup mushrooms, sliced (shiitake or button)
  • 1 green onion, chopped
  • 1 slice American cheese (optional)

Instructions

  1. In a large pot or Dutch oven, heat the vegetable oil over medium-high heat. Add the sliced beef and cook until browned, about 3-4 minutes.
  2. Stir in the sliced onion and minced garlic, cooking until the onion is translucent.
  3. Add the chopped kimchi to the pot, stirring it in with the beef and onions.
  4. Pour in the water or beef broth, then add the gochujang, soy sauce, sesame oil, and black pepper. Stir everything together, bringing it to a gentle boil.
  5. Once it’s bubbling, reduce the heat to medium and let it simmer for about 5 minutes to let those flavors meld together.
  6. Add the instant ramen noodles, baked beans, hot dogs or sausages, tofu, and mushrooms. Stir gently to combine.
  7. Cover the pot and let it simmer for another 5-7 minutes, or until the noodles are cooked through and the stew is heated all the way.
  8. If you like it cheesy, lay a slice of American cheese on top just before serving, letting it melt into the stew.
  9. Garnish with chopped green onions before serving. Ladle the stew into bowls and enjoy it hot, preferably with a side of rice.
