- 1 tablespoon vegetable oil
- 1/2 pound sliced beef (like brisket or ribeye)
- 1/2 onion, sliced
- 2 cloves garlic, minced
- 1/2 cup kimchi, chopped
- 1 cup water or beef broth
- 1 tablespoon gochujang (Korean red pepper paste)
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
- 1/2 teaspoon black pepper
- 1 cup instant ramen noodles
- 1/2 cup baked beans (canned)
- 1/2 cup sliced hot dogs or sausages
- 1/2 cup tofu, cubed
- 1 cup mushrooms, sliced (shiitake or button)
- 1 green onion, chopped
- 1 slice American cheese (optional)
Instructions
- In a large pot or Dutch oven, heat the vegetable oil over medium-high heat. Add the sliced beef and cook until browned, about 3-4 minutes.
- Stir in the sliced onion and minced garlic, cooking until the onion is translucent.
- Add the chopped kimchi to the pot, stirring it in with the beef and onions.
- Pour in the water or beef broth, then add the gochujang, soy sauce, sesame oil, and black pepper. Stir everything together, bringing it to a gentle boil.
- Once it’s bubbling, reduce the heat to medium and let it simmer for about 5 minutes to let those flavors meld together.
- Add the instant ramen noodles, baked beans, hot dogs or sausages, tofu, and mushrooms. Stir gently to combine.
- Cover the pot and let it simmer for another 5-7 minutes, or until the noodles are cooked through and the stew is heated all the way.
- If you like it cheesy, lay a slice of American cheese on top just before serving, letting it melt into the stew.
- Garnish with chopped green onions before serving. Ladle the stew into bowls and enjoy it hot, preferably with a side of rice.
