- 1 cup packed brown sugar
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 and 1/2 cups all-purpose flour
- 1 teaspoon baking soda

- 1 teaspoon ground cinnamon
- 3 cups old-fashioned rolled oats
- 1 cup semi-sweet chocolate chips
- 1/2 cup chopped nuts (optional)
Instructions
- Brown the butter in a medium saucepan over medium heat, stirring frequently until golden brown and nutty smelling (about 5 to 7 minutes).
- In a large mixing bowl, combine the brown butter, brown sugar, and granulated sugar, whisking until smooth.
- Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
- In another bowl, whisk together the flour, baking soda, salt, and cinnamon.
- Gradually add the dry mixture to the wet ingredients, stirring until just combined.
- Fold in the rolled oats and chocolate chips, and optional chopped nuts.
- Preheat the oven to 350°F and line a baking sheet with parchment paper.
- Drop rounded balls of dough onto the prepared baking sheet, leaving about 2 inches between each cookie.
- Bake for 10 to 12 minutes, or until the edges are golden brown.
- Let the cookies cool on the baking sheet for about 5 minutes before transferring to a wire rack to cool completely.
