Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a small bowl, combine the flour, baking soda, and salt. Mix well and set aside.
  3. In a larger mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  4. Beat in the egg and vanilla extract until well combined.
  5. Gradually add the dry ingredients into the wet mixture, stirring until just combined. Avoid overmixing.
  6. Gently fold in the dried blueberries, shredded coconut, and chopped pecans until evenly distributed.
  7. Drop spoonfuls of the cookie dough onto a lined baking sheet, spacing them about 2 inches apart.
  8. Bake for 10-12 minutes or until lightly golden at the edges.
