- 2 (6-ounce) grouper fillets
- 2 tablespoons olive oil
- 1 tablespoon paprika
- 1 teaspoon cayenne pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder

- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 4 slices of crusty bread or brioche buns
- 1 cup shredded lettuce
- 1 medium tomato, sliced
- 1/2 cup tartar sauce (store-bought or homemade)
- Lemon wedges, for serving
Instructions
- Preheat your grill or a cast-iron skillet over medium-high heat.
- In a small bowl, mix together the paprika, cayenne pepper, garlic powder, onion powder, thyme, oregano, salt, and black pepper.
- Drizzle the olive oil over the grouper fillets and coat them well.
- Generously sprinkle the spice mixture over both sides of the fillets.
- Carefully place the seasoned grouper fillets on the hot grill or skillet and cook for about 3 to 4 minutes on each side until cooked through and blackened.
- Toast your bread or buns on the grill or in a toaster until golden and crispy.
- Assemble your sandwich starting with a slice of toasted bread or the bottom half of your bun, followed by shredded lettuce, a slice of tomato, the blackened grouper fillet, and tartar sauce. Top with the other slice of bread or bun.
- Serve with lemon wedges on the side.
