  • 1/2 cup tartar sauce (store-bought or homemade)
  • Lemon wedges, for serving

Instructions

  1. Preheat your grill or a cast-iron skillet over medium-high heat.
  2. In a small bowl, mix together the paprika, cayenne pepper, garlic powder, onion powder, thyme, oregano, salt, and black pepper.
  3. Drizzle the olive oil over the grouper fillets and coat them well.
  4. Generously sprinkle the spice mixture over both sides of the fillets.
  5. Carefully place the seasoned grouper fillets on the hot grill or skillet and cook for about 3 to 4 minutes on each side until cooked through and blackened.
  6. Toast your bread or buns on the grill or in a toaster until golden and crispy.
  7. Assemble your sandwich starting with a slice of toasted bread or the bottom half of your bun, followed by shredded lettuce, a slice of tomato, the blackened grouper fillet, and tartar sauce. Top with the other slice of bread or bun.
  8. Serve with lemon wedges on the side.
