Ingredients:
- 2 large apples, peeled, cored, and diced
- 2 cups all-purpose flour
- 1/4 cup granulated sugar
- 2 teaspoons baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 2 large eggs
- 1 cup whole milk
- 1 teaspoon vanilla extract
- 2 tablespoons unsalted butter, melted
- Vegetable oil for frying
For the Glaze:
- 1 1/2 cups powdered sugar
- 3 tablespoons milk
- 1/2 teaspoon vanilla extract
Directions:
- In a large bowl, whisk together the flour, granulated sugar, baking powder, ground cinnamon, and salt.
- In a separate bowl, beat the eggs, then whisk in the milk, vanilla extract, and melted butter.
- Add the wet ingredients to the dry ingredients and stir until just combined. Fold in the diced apples.
- Heat about 1 inch of vegetable oil in a large skillet or deep fryer to 350°F (175°C).
- Carefully drop large spoonfuls of batter into the hot oil, flattening them slightly with the back of the spoon. Fry until golden brown, about 3-4 minutes per side, turning once. Drain on paper towels.
- In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth to make the glaze.
- While the fritters are still warm, dip them into the glaze or drizzle the glaze over the top. Let the glaze set before serving.
