A delicious and hearty Cajun Chicken and Sausage Gumbo that is perfect for any occasion.
Ingredients

- 1/4 cup all-purpose flour (for roux)
- 1/4 cup vegetable oil (for roux)
- 1 pound boneless skinless chicken thighs, diced
- 1 pound smoked turkey sausage, sliced
- 1 medium onion, chopped
- 1 green bell pepper, chopped
- 2 stalks celery, chopped
- 4 cloves garlic, minced
- 6 cups chicken broth
- 1 cup okra, sliced (fresh or frozen)
- 1 tablespoon Cajun seasoning
- 1 tablespoon Worcestershire sauce
- 2 bay leaves
- Cooked white rice for serving
- Fresh parsley, chopped for garnish
Instructions
- In a large pot, heat the vegetable oil over medium heat. Gradually whisk in the flour, stirring constantly until it turns a deep brown color (about 15-20 minutes).
- Add the chopped onions, bell pepper, and celery to the roux, stirring until they’re softened.
- Toss in the diced chicken and sliced sausage. Cook until the chicken is lightly browned.
- Slowly add the chicken broth while stirring. Then add the minced garlic, okra, Cajun seasoning, Worcestershire sauce, bay leaves, salt, and pepper. Bring to a low simmer.
- Let the gumbo simmer for about 30-40 minutes, stirring occasionally.
- Once everything is well combined and the chicken is cooked through, remove the bay leaves. Serve the gumbo over hot cooked white rice and garnish with fresh parsley.
Notes
- For a thicker gumbo, let it simmer longer.
- Feel free to adjust the Cajun seasoning to your taste.
- Leftovers can be stored in the refrigerator for up to 3 days.
