Ingredients

  • 1/4 cup vegetable oil (for roux)
  • 1 pound boneless skinless chicken thighs, diced
  • 1 pound smoked turkey sausage, sliced
  • 1 medium onion, chopped
  • 1 green bell pepper, chopped
  • 2 stalks celery, chopped
  • 4 cloves garlic, minced
  • 6 cups chicken broth
  • 1 cup okra, sliced (fresh or frozen)
  • 1 tablespoon Cajun seasoning
  • 1 tablespoon Worcestershire sauce
  • 2 bay leaves
  • Cooked white rice for serving
  • Fresh parsley, chopped for garnish

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Gradually whisk in the flour, stirring constantly until it turns a deep brown color (about 15-20 minutes).
  2. Add the chopped onions, bell pepper, and celery to the roux, stirring until they’re softened.
  3. Toss in the diced chicken and sliced sausage. Cook until the chicken is lightly browned.
  4. Slowly add the chicken broth while stirring. Then add the minced garlic, okra, Cajun seasoning, Worcestershire sauce, bay leaves, salt, and pepper. Bring to a low simmer.
  5. Let the gumbo simmer for about 30-40 minutes, stirring occasionally.
  6. Once everything is well combined and the chicken is cooked through, remove the bay leaves. Serve the gumbo over hot cooked white rice and garnish with fresh parsley.

Notes

  • For a thicker gumbo, let it simmer longer.
  • Feel free to adjust the Cajun seasoning to your taste.
