Ingredients:
- 2 lbs beef tips or stew meat
- 2 tablespoons olive oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 2 cups beef broth
- 1 cup red wine (optional, can substitute with additional beef broth)
- 2 tablespoons Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1/4 cup all-purpose flour
- 1/4 cup water
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Directions:
- Heat olive oil in a large skillet or Dutch oven over medium-high heat.
- Add the beef tips and brown on all sides, about 5-7 minutes. Remove the beef from the skillet and set aside.
- In the same skillet, add the chopped onion and cook until softened, about 5 minutes. Add the minced garlic and cook for an additional 1-2 minutes until fragrant.
- Stir in the beef broth, red wine (if using), Worcestershire sauce, dried thyme, and dried rosemary. Bring the mixture to a boil.
- Return the beef tips to the skillet, reduce the heat to low, cover, and simmer for 1 to 1 1/2 hours, or until the beef is tender.
- In a small bowl, whisk together the flour and water until smooth. Gradually stir this mixture into the skillet to thicken the gravy.
- Cook for an additional 5-10 minutes, or until the gravy has thickened to your desired consistency. Season with salt and pepper to taste.
- Garnish with chopped fresh parsley before serving.
