- 1 potato
- Beef (amount as desired)
- Japanese curry blocks (I used Golden Curry)
- Udon noodles (amount as desired)
Instructions
- Slice onion thinly and sauté in oil over medium heat for 10–15 minutes until golden brown and soft.
- Chop potato into cubes, add to the pot with beef, and stir-fry for about 5 minutes until beef browns slightly.
- Add enough water to cover, bring to a boil, then simmer until potatoes are tender (10–15 minutes). Add curry blocks and stir until dissolved and thickened.
- While curry simmers, cook udon noodles according to package instructions, then drain and divide into bowls.
- Pour hot curry over noodles and serve with green onions, chili flakes, sesame seeds, or a soft-boiled egg if desired.
Notes
- Adjust the amount of beef and potatoes based on personal preference.
- Feel free to add other vegetables like carrots or bell peppers.
- For a spicier kick, add more chili flakes or use a spicier curry block.
