Description

Beef Curry Udon is a comforting Japanese dish featuring tender beef, hearty potatoes, and thick udon noodles, all enveloped in a rich and flavorful curry sauce.

Ingredients

Scale
  • 1 onion
  • 1 potato
  • Beef (amount as desired)
  • Japanese curry blocks (I used Golden Curry)
  • Udon noodles (amount as desired)

Instructions

  1. Slice onion thinly and sauté in oil over medium heat for 10–15 minutes until golden brown and soft.
  2. Chop potato into cubes, add to the pot with beef, and stir-fry for about 5 minutes until beef browns slightly.
  3. Add enough water to cover, bring to a boil, then simmer until potatoes are tender (10–15 minutes). Add curry blocks and stir until dissolved and thickened.
  4. While curry simmers, cook udon noodles according to package instructions, then drain and divide into bowls.
  5. Pour hot curry over noodles and serve with green onions, chili flakes, sesame seeds, or a soft-boiled egg if desired.

Notes

  • Adjust the amount of beef and potatoes based on personal preference.
  • Feel free to add other vegetables like carrots or bell peppers.
  • For a spicier kick, add more chili flakes or use a spicier curry block.
