Description

A simple and delicious recipe for banana muffins that are perfect for breakfast or a snack.

Ingredients

Scale
  • 3 ripe bananas, mashed
  • 1/3 cup melted butter
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 and 1/2 cups all-purpose flour
  • 1/2 teaspoon ground cinnamon (optional)
  • 1/2 cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a standard muffin tin with paper liners or grease it lightly.
  2. Mash the ripe bananas in a large mixing bowl until smooth, then stir in the melted butter.
  3. Add the granulated sugar and brown sugar, mixing until combined. Beat in the eggs one at a time, followed by the vanilla extract.
  4. In a separate bowl, whisk together the baking soda, salt, flour, and cinnamon (if using).
  5. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
  6. If using nuts, fold them in gently.
  7. Scoop the batter into the prepared muffin tin, filling each cup about two-thirds full.
  8. Bake for 18 to 20 minutes, or until a toothpick inserted comes out clean or with a few moist crumbs.
  9. Let the muffins cool in the pan for about 5 minutes, then transfer to a wire rack to cool completely.

Notes

  • For a sweeter muffin, you can increase the sugar slightly.
  • These muffins can be stored in an airtight container for up to 3 days.
  • Feel free to experiment with add-ins like chocolate chips or dried fruit.
