- 3 ripe bananas, mashed
- 1/3 cup melted butter
- 1/2 cup granulated sugar
- 1/2 cup brown sugar, packed
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 and 1/2 cups all-purpose flour
- 1/2 teaspoon ground cinnamon (optional)
- 1/2 cup chopped walnuts or pecans (optional)
Instructions
- Preheat your oven to 350°F (175°C). Line a standard muffin tin with paper liners or grease it lightly.
- Mash the ripe bananas in a large mixing bowl until smooth, then stir in the melted butter.
- Add the granulated sugar and brown sugar, mixing until combined. Beat in the eggs one at a time, followed by the vanilla extract.
- In a separate bowl, whisk together the baking soda, salt, flour, and cinnamon (if using).
- Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
- If using nuts, fold them in gently.
- Scoop the batter into the prepared muffin tin, filling each cup about two-thirds full.
- Bake for 18 to 20 minutes, or until a toothpick inserted comes out clean or with a few moist crumbs.
- Let the muffins cool in the pan for about 5 minutes, then transfer to a wire rack to cool completely.
Notes
- For a sweeter muffin, you can increase the sugar slightly.
- These muffins can be stored in an airtight container for up to 3 days.
- Feel free to experiment with add-ins like chocolate chips or dried fruit.
