- 1 cup vegetable oil
- 4 large eggs
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder

- 1 teaspoon vanilla extract
- 1 cup buttermilk
- 1 cup shredded coconut
- 1 cup crushed pineapple, drained
- 1 cup chopped pecans or walnuts (optional)
- 1 cup raisins (optional)
Instructions
- Preheat your oven to 350°F. Grease and flour a 9×13-inch baking pan, or line it with parchment paper for easy removal.
- In a large mixing bowl, combine the granulated sugar and vegetable oil. Beat in the eggs one at a time, mixing well after each addition until the mixture is smooth and creamy.
- In another bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
- Gradually add the dry ingredients to the wet mixture, alternating with the buttermilk. Start and end with the dry ingredients, mixing just until everything is combined.
- Fold in the shredded coconut, crushed pineapple, and nuts if using. Add raisins for extra sweetness if desired.
- Pour the batter into the prepared baking pan and spread it out evenly. Tap the pan gently on the counter to release air bubbles.
- Bake for 35 to 40 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
- Once done, let the cake cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely before slicing.
