- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup buttermilk
- 1/2 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup fresh blueberries (or your favorite fruit)
- 1/2 cup chopped pecans or walnuts (optional)
- 1 tablespoon coarse sugar for topping (optional)
Instructions
- Preheat your oven to 375°F. Line a standard muffin tin with paper liners or grease it well to prevent sticking.
- In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, baking soda, and salt until well combined.
- In another bowl, mix the buttermilk, vegetable oil, eggs, and vanilla extract until smooth and creamy.
- Pour the wet ingredients into the dry ingredients and gently fold them together using a spatula or wooden spoon, being careful not to overmix.
- Gently fold in the blueberries and nuts if using.
- Scoop the batter into the prepared muffin tin, filling each cup about two-thirds full. Sprinkle coarse sugar on top if desired.
- Bake for 18 to 20 minutes, or until a toothpick inserted into the center comes out clean.
- Let the muffins cool in the tin for about 5 minutes before transferring them to a wire rack to cool completely.
