Ingredients

  • 1 pound ground beef (80/20 blend for juiciness)
  • 4 slices thick-cut bacon
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup brown sugar
  • 1/4 cup apple cider vinegar
  • 1/4 cup brewed coffee
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon black pepper
  • 1/2 teaspoon salt
  • 4 hamburger buns
  • 4 slices cheddar cheese (optional)
  • Lettuce, tomato, and pickles for topping

Instructions

  1. Cook the bacon in a skillet over medium heat until crispy, then remove and drain on paper towels, keeping 2 tablespoons of grease.
  2. In the same skillet, cook the chopped onion in the bacon grease until soft, about 5 minutes.
  3. Add minced garlic and cook for another minute until fragrant.
  4. Stir in brown sugar, apple cider vinegar, brewed coffee, Worcestershire sauce, black pepper, and salt. Simmer for 10-15 minutes until thickened.
  5. Stir in chopped bacon and cook for an additional 5 minutes. Remove from heat.
  6. Shape ground beef into four equal patties, making a slight indentation in the center. Season with salt and pepper.
  7. Preheat grill or skillet over medium-high heat. Cook patties for 4-5 minutes on one side. Add cheese during the last minute if desired.
  8. Flip patties and cook for another 3-4 minutes for medium-rare.
  9. Toast hamburger buns until golden brown.
  10. Spread bacon jam on the bottom half of each bun, add the patty, and top with lettuce, tomato, and pickles. Cap with the top half of the bun.
  11. Serve hot and enjoy!
