- Pumpkin or Sweet Potato: 250 grams (Alternative Buns)

- Yeast: 3-4 grams (Alternative Buns)

Instructions
- Prepare your choice of starch (potato or pumpkin) by peeling and cutting into small pieces.
- Steam the starch until extremely soft, which can take 20-40 minutes depending on the type.
- Mash the steamed starch into a paste, then mix in sugar and yeast.
- Gradually add flour and knead the dough until it is flexible but not sticky, about 5 minutes.
- Let the dough rise for 30 minutes.
- Knead for another 3 minutes and let it rest for 1.5-3 hours or until doubled in size.
- If the dough is sticky, knead in more flour.
- Shape the dough into desired forms and let each bun rise for another 20 minutes.
- Steam the buns for 15 minutes, ensuring parchment paper is under each bun.
Notes
- For plain white dough, mix water, yeast, and sugar in a cup, then add to flour and knead.
