Description

Delicious Air Fryer Blueberry Donuts made with fresh blueberries and topped with a light glaze.

Ingredients

Scale
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup plain Greek yogurt
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup fresh blueberries (plus extra for garnish)
  • 1 tablespoon melted butter (for brushing)
  • 1 cup powdered sugar (for glaze)
  • 2 tablespoons milk (for glaze)
  • 1/2 teaspoon vanilla extract (for glaze)

Instructions

  1. Preheat your air fryer to 350°F.
  2. In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, baking soda, salt, and ground cinnamon.
  3. In another bowl, mix together the Greek yogurt, egg, and vanilla extract until smooth.
  4. Gently fold the wet ingredients into the dry ingredients until just combined, then fold in the fresh blueberries.
  5. Lightly grease your donut pan and spoon the batter into the molds, filling them halfway.
  6. Place the filled donut pan in the air fryer basket and cook for 5 to 7 minutes, or until golden brown.
  7. Remove the donut pan and let the donuts cool for a few minutes before transferring to a wire rack.
  8. Prepare the light glaze by whisking together powdered sugar, milk, and vanilla extract until smooth.
  9. Dip the tops of the cooled donuts into the glaze and sprinkle with fresh blueberries.
  10. Let the glaze set for a few minutes before serving.

Notes

  • These donuts are best enjoyed fresh but can be stored in an airtight container for a day or two.
  • Adjust the glaze consistency by adding more milk if needed.
