THIS CHOCOLATE CHEESECAKE IS STUFFED WITH CARAMEL PECAN FILLING

Ingredients:

2 cups graham cracker crumbs

⅓ cup white sugar

½ cup butter, melted

30 caramels individually wrapped caramels, unwrapped

3 tablespoons milk

¾ cup chopped pecans

1 cup semisweet chocolate chips

3 (8 ounce) packages cream cheese, softened

¾ cup white sugar

1 teaspoon vanilla extract

3 large eggs

Directions:

Step 1: In a medium mixing bowl, add the graham cracker crumbs, melted butter, and sugar. Stir until well mixed.

Step 2: Transfer the mixture into a 9-inch springform pan and press it on the bottom.

Step 3: Pour the melted caramel mixture over and spread it on top.

Step 4: Place the pan inside the fridge for 30 minutes to chill.

How To Make the Caramel Filling:

Step 1: Add milk and caramels in a small saucepan.

Step 2: Place the saucepan on the stove and turn the heat to low. Stir and heat until smooth.

Step 3: Add the chopped pecans and stir until well combined.

Step 4: Prepare the oven and preheat to 165 degrees C or 325 degrees F.

Step 5: Place the chocolate on top of the double boiler and allow it to melt while stirring from time to time.

Step 6: Remove from the heat and let it sit at room temperature to cool.

Step 7: In a large mixing bowl, add the vanilla, cream cheese, and sugar. Stir until well mixed.

Step 8: Add the eggs gradually and beat every addition.

Step 9: Add 1/3 of the filling into the melted chocolate. Stir until well combined, then transfer the mixture into the filling. Stir until well mixed.

Step 10: Transfer the mixture into the crust.

Step 11: Place inside the preheated oven and bake for 50 minutes or until nearly set.

Step 12: Place a pan filled with water under the cheesecake. This will prevent the cake from cracking.

Step 13: Remove from the oven and let it sit at room temperature to cool.

Step 14: Place inside the fridge to chill for at least 5 hours.

Step 15: Serve and enjoy!
