ITALIAN SKILLET CHICKEN WITH TOMATOES AND MUSHROOMS

A simple dinner meal that you can prep in only ten minutes! An Italian-inspired skillet chicken that will impress not only your loved ones but your guests. Chicken Breasts cooked in white wine with tomatoes and mushrooms, simply delightful!

INGREDIENTS

4 large chicken cutlets (boneless skinless chicken breasts cut into ¼-inch thin cutlets)

1 tablespoon dried oregano, divided

1 teaspoon salt, divided

1 teaspoon black pepper, divided

½ c all-purpose flour, more for later

Private Reserve Extra Virgin Olive Oil

8 ounces Baby Bella mushrooms, cleaned, trimmed, and sliced

14 ounces grape tomatoes, halved

2 tablespoons chopped fresh garlic

½ c white wine

1 tablespoon freshly squeezed lemon juice (juice of ½ lemon)

¾ c chicken broth

A handful of baby spinach (optional)

How to make Italian Skillet Chicken with Tomatoes and Mushrooms

Step 1: Pat dry the chicken cutlets and season entirely with half tbsp dried oregano, half tsp salt, and half tsp black pepper. Then, coat with flour, dusting off the excess. Set the cutlets aside.

Step 2: In a large cast-iron skillet with a lid, heat 2 tbsp olive oil. Once the oil is hot, add the chicken cutlets and sear on both sides for about 3 minutes until brown. Place the cooked cutlets to a plate and set aside.

Step 3: Add more oil to the same skillet if needed. Saute the mushrooms for about a minute or so over medium-high heat. Add in the tomatoes, garlic, the rest of the half tbsp oregano, half tsp salt, and half tsp pepper, and 2 tsp flour. Cook further for 3 minutes, regularly stirring.

Step 4: Pour in the white wine, allow to reduce a bit before adding in the lemon juice and chicken broth.

Step 5: Boil the liquid. Place the chicken back to the skillet and cook for about 3 to 4 minutes over high heat. Adjust the heat to medium-low, cover the pan, and continue to cook for 8 minutes more, or until the chicken is completely cooked and the internal temperature reads 165 degrees F.

Step 6: Just before serving, stir in a handful of baby spinach if desired.

Step 7: Enjoy with your desired small pasta such as orzo while hot and crusty Italian bread on the side.
