My love for everything salad started when I was very young. My mom has this mini garden at the back of our house. She’s fond of planting not flowers but crops. Not surprisingly that I get my interest in crops and plants from her. Whenever she makes a salad, she just goes to her garden and picks the ingredients. My mom is a very lovely lady, she’s a simple woman. She loves to cook, plant, and read. Most of my recipes, I get from her. She’s my inspiration for everything! On the day that I have to move out, I cried so much. I remembered her saying to me that I can always come to visit and that I did! Whenever I visit her, she cooks for me. She knows how much I love salad, so there is always fresh salad on the table. My favourite salad and my most requested is this cucumber tomato avocado salad. It’s a breeze to make, very refreshing, and delicious! It’s a no-brainer, you just have to put everything together and serve. The light lemon dressing, the freshness of cilantro, and the addition of avocado and cucumber are a total winner! A summer salad that will always be my favourite until I am wrinkled!
2 tbsp extra virgin olive oil
2 tbsp lemon juice
3 small avocados
5 small cucumbers
12 oz. grape or cherry tomatoes
½ bunch cilantro about ¼ cup
1 tsp sea salt
½ tsp black pepper
HOW TO MAKE CUCUMBER TOMATO AVOCADO SALAD
Step 1: After washing the veggies, slice them into small pieces, and add them into a mixing bowl. Finely chop the cilantro, then add it into the bowl.
Step 2: To the veggies, add the olive oil, lemon juice, and season with salt & pepper. Gently toss to coat.
Step 3: Serve the salad immediately. Enjoy!
