CHEESY HASSELBACK ZUCCHINI PIZZAS

These heavenly treats are superb! The combination of flavours in these Zucchini Pizzas is just too perfect! Give this recipe a try and I am sure that you are going to love it! Ingredients:

1 zucchini squash

2-3 deli slices of mozzarella cheese

12-14 slices pepperoni (turkey or regular)

1/8-1/4 teaspoon crushed red pepper flakes

parsley to garnish (optional)

Directions:

Step 1: Prepare the oven and preheat to 220 degrees C or 425 degrees F.

Step 2: Slice the end of the washed and pat dried zucchini.

Step 3: Stick a chopstick on the sides of the squash and start to slice until the knife reaches the chopstick. Slice it into discs. Repeat this process to the rest of the squash.

Step 4: Cut each zucchini into two.

Step 5: Line with aluminium foil on a baking sheet. Lay the sliced squash onto the prepared baking sheet.

Step 6: Stuff each zucchini disc with pepperoni and cheese.

Step 7: Season each disc with red pepper flakes and cover it with aluminium foil.

Step 8: Place inside the preheated oven and bake for about 20 minutes or until done.

Step 9: Remove from the oven and let it sit at room temperature for about 5 minutes.

Step 10: Serve and enjoy!
