2 tbsp olive oil

3 c baby spinach

2 zucchinis small, diced small

2 yellow squash small, diced small

1/4 c feta cheese crumbles fat-free

1/4 c parmesan cheese low-fat, grated

1/4 c whole-wheat panko breadcrumbs

2 Egg whites

1/2 tsp kosher salt

2 tsp garlic powder

1/2 tsp ground black pepper

1 tsp dried basil leaves


Step 1: Prepare the oven and preheat to 200 degrees C or 400 degrees F.

Step 2: Apply cooking spray in a 9×13-inch casserole dish.

Step 3: Place a large skillet on the stove and turn the heat to medium.

Step 4: Add olive oil and allow it to become hot.

Step 5: Add the spinach, yellow squash, and zucchini. Cook until wilted and translucent for about 5 minutes.

Step 6: Discard any excess liquid and transfer everything to a large bowl.

Step 7: Add the rest of the ingredients into the mixing bowl. Stir until well combined.

Step 8: Spread the mixture into the greased casserole dish.

Step 9: Place it inside the preheated oven and bake for 40 minutes or until done.

Step 10: Remove from the oven and allow it to cool at room temperature.

Step 11: Serve and enjoy!
